Apart from Stollen, Elisenlebkuchen is THE other traditional German Christmas bake. There are as many recipes as there are bakers, and each family has their own version. This is mine, and the result of 3 years' trial and error.
Elisenlebkuchen are more than just gingerbread - they are filled with hazelnuts, walnuts, almonds, marzipan, mixed peel and a traditional German Christmas spice mixture - and they are soft and chewy, coated either with chocolate or a lemon sugar icing. Trust me, once you have had these, you don't want to go back to shop-bought ones!
